Staff Picks: Food Saving

This week, we asked the Sustainable Campus team their favorite ways to reduce food waste!

Emma

I overestimate the amount of ingredients in most meals, so freezing leftovers like macaroni and cheese, eggplant parmesan, soups, and honestly anything I can’t finish, into a glass tupperware is how I stretch a meal and a buck.

Repackaging items in your refrigerator! Most of the time, the packaging that produce comes in from the store isn’t the most effective at keeping it from going bad. Washing your produce and then repackaging in tupperware or wrapping in cloths/paper towels can extend your produce life by a few days to a week! My best example of this is adding a paper towel to my spinach container to absorb moisture, which makes it last two weeks.

Investing in good food storage (Tupperware, bags, etc.) is the key! I also use a paper towel with my greens (mostly spinach and arugula) to keep them good for longer - Jake

I pretend I’m on Chopped and try to use leftovers or things in my fridge that are about to expire to create something totally new!

Erin

I clean out my emptied pasta sauce jars and use them to store vegetables for longer. I do this a lot with carrots because they stay fresh a lot longer if you store them in a jar with water.

I grocery shop in small batches to prevent food waste. I find when I “stock up” for the week its more like for the month and so much waste is produced.
